Don and I are trying to be more intentional about having people over to our house so we can enjoy old, new, and potentially new friends. One way we are doing this is by having at least one family over for dinner a week. So far, this has been a lot of fun. I’m trying to build up a “dinner guest” recipe book that makes it easy to keep my pantry stocked for such dinners. So, if you have any good dinner recipes that most people enjoy (ya know, nothing too unique), or if you know of a good cookbook I should check out, please share!

I’m also planning on hosting a Pampered Chef party next month and I am considering selling the products. I really like PC products and I like how the cooking parties will give me a chance to meet new people. I also love the idea of helping people create inexpensive and healthy meals on quality cookware! I feel like it’s a chance to promote healthy eating at home and encourage people to be more hospitable (two things I value highly).

entertained angels unawares.

I think our guests like wings. All of them. Boneless and regular. With Ranch :-)

 
 

The last time I had people over for dinner I made this yummy baked chicken dish that everyone really liked. I have been asked to make it for people’s church pot luck’s and family things! It’s probably very fattening though!

Line your casserole dish (es) with foil, it makes washing them a lot easier!

I use boneless, skinless, chicken tenderloins. (or breasts if you prefer)
I lay them in the bottom of the dish and add a few tablespoons of butter in between them.
Then I season them with a garlic/onion seasoning mix and a hint of either a Cajun blend if your guests like spicy or use a Mesquite seasoning if spicy isn’t your thing. Flip them over and season that side.
Cover with foil and bake at 375 for a half hour.
Then take it out, flip your chicken and add a layer of shredded cheddar cheese. Recover with foil and bake another half hour.
Take out, uncover and then add those French’s dried onion things to the top of the chicken. Put back in the oven uncovered for about 5 minutes to brown the onions.

Take out and serve! It tastes great with so many different sides too. :)

 
 

Oh! This is working with frozen chicken too, the cooking time is about 20 minutes each side if you use fresh.
